There are a wide array of materials that special microwave cookware can be made from.  However, it is important not to place any container or bowl made from any type of metal in the microwave.  Be sure to watch out for bowls with metal trimmings or decorations.  If you place metal microwave cookware in the microwave, you will see sparks that create a serious hazard.  It should also be noted that one should not put aluminum foil in the microwave either, as this will produce the same results.

There are many safe microwave cookware alternatives to metal.  The best microwave cookware does not absorb too much heat.  Your best option is ceramic or earthenware cookware; however, the ceramic cookware should be unglazed.  (Glazed cookware produces too much heat.)  The use of plastic and wooden cookware in the microwave should be limited, and you should never put any sort of Tupperware in the microwave.  Tupperware will melt and create a serious hazard.  Both clay and heat-resistant glass can be used in the microwave, but avoid using lead or crystal materials.

Is It Safe?

You can test for yourself whether or not the microwave cookware you wish to place in the microwave is actually safe.  To do this, fill a cup with water and place it in the microwave next to the microwave cookware you wish to test.  On high power, run the microwave for one minute.  If the container feels hot after one minute, then it is not safe microwave cookware. 

Cooking In Style

Making Meals with Lodge Cookware

Lodge brand cookware is made in the USA of cast iron.  Some pieces are painted with an enamel coat, but the company is definitely most famous for its bare cast iron.  The company makes cookware in sizes from tiny skillets for warming butter to giant Dutch ovens for cooking a whole goose.  They also make griddles, pans for cornbread and supplies to cook over a campfire.  Iron is an excellent, long-lived material for cookware and costs a fraction of the price of copper or alloy pans. 

However, whether you have lodge bare iron cookware or that with an enamel coat, a few tips will make it easier to cook with iron. 

Heat

Iron cookware takes longer to heat up than pots and pans made of thinner material like copper.  So, Lodge cookware cannot give the chef fast heat, but it is perfect for long lasting, even heat.  When you buy iron, however, invest in some heatproof handle covers.  The handle of a skillet on the stove is hot enough to burn your hand, and of course the handle of a skillet in the oven is as hot as the rest of the dish. 

Also, bare iron cookware can withstand the highest cooking temperatures, when you need major heat for blackened dishes.  There is almost no way to scorch Lodge cookware. Many cooks advise against cooking very acidic foods, like sautéed tomatoes, in bare iron, as the acids can break down the seasoning coat and react with the metal underneath.  This is not an issue with enamel-covered pans.

The inside of the pot usually ends up better seasoned than the outside; it always has oil in it, and cooks are usually more careful to oil the inside after each meal.  So if the outside of your Lodge cookware is relatively less seasoned, don’t cook anything that might boil over.  It will be extremely difficult to wash off.

Iron cookware is especially well suited for bread because they give dishes a good crust.  An empty iron pan can be put into a hot oven while it preheats and you get the dough ready.  When pan and oven are hot, pour the dough or batter into the hot pan.  You will hear it sizzle as a thin little crust immediately forms.  If the pan is well seasoned enough, it is possible to make cakes and breads without greasing the pan first.

Maintaining Lodge Cast Iron Cookware

Cast iron cookware is something that can last for generations.  Some families have been making roux, biscuits, and pancakes in the same pan for over one hundred years.  But at the same time, look in any antique store or yard sale, and you are likely to find a poor rusted pan that no one took care of. 

Some of these old pieces are Lodge cast iron cookware.  The company has been around for decades and makes good quality iron in lots of forms.  Whether your piece is new or vintage, follow a few simple maintenance steps, and it will last indefinitely. 

First Seasoning

The process of preparing a piece of iron cookware for use is called seasoning.  With a new piece of Lodge cast iron cookware, first, scour all surfaces gently with soap and water to remove any shipping dust and dry thoroughly.  Next, coat every surface of the pan and lid, including the handles and base with cooking oil.  You can use any liquid oil or melted butter.  Finally, put the empty pots into a 350 degree oven and cook for one hour. 

After the Lodge cast iron cookware cools in the oven, it will have a slight shine and patina.  Now it is ready for cooking and protected from rust.  If you miss a spot, you can repeat the process.  You should also repeat this maintenance about once a year.  The inside of the pan will get slicker and build up more patina over the years.   

Everyday Cleaning

Lodge cast iron cookware should not be cleaned with harsh detergents as they can wear off the seasoning.  Instead, after cooking, wipe out the pan with hot water and a soft sponge.  Only use soap or a scouring pad if there is a stubborn stain.  After that, remember to dry Lodge cast iron cookware immediately to prevent rust, and then rub the cooking surfaces with a little oil dabbed on a paper towel. 

Revitalizing a Vintage Piece

Now, back to the rusty pan – if the damage is not too severe, a rusted pan can be brought back into use.  The first step is thoroughly cleaning off the rust.  Use a file or metal sanding pad, available at home improvement stores, to remove all visible signs of rust, and a little more for safety.  Then proceed with seasoning the pot like it was new.  If your food tastes slightly metallic, repeat the process.  If the odd taste is still present, it is better to use your nicely seasoned piece just for decoration.
